- Dejar en remojo a la noche por separado maíz y porotos. Cocinar separados aprox 2 horas. Revisar de a ratos probar y agregar caldo si es necesario
- En una cacerola caliente sin aceite poner la panceta cortada finita para dorar en su propia grasa. Cortar en cuadraditos todas las carnes y agregar en esa cacerola para sellar.
- Rehogar en sartén con poco aceite las cebollas puerros verdeos ajíes y ajo cortados en pedazos chiquitos. Agregar a las carnes.
- Cubrir con agua y caldo por partes iguales y cocinar media hora.
- Unir las carnes el maíz y los porotos. Dejar cocinar 2 o 3 horas a fuego mínimo agregando caldo de vez en cuando
- Condimentar con sal fina pimentón cúrcuma tomillo mientras se va cocinando.
- Apagar 1 hora por lo menos antes de servir para que tome el gusto de cada ingrediente. Calentar un poco antes de servir.
