- 24 langostinos
- 400 gr calabaza
- 1 puerro
- 2 patatas
- 1 zanahoria
- pimienta negra
- 1 copita coñac

- Limpiamos los langostinos quitándoles las cabezas y las cáscaras que los recubren.
- En una tartera con el fondo cubierto de aceite, doramos las cabezas y cáscaras de los langostinos. Reservamos y colamos el aceite volviéndolo a poner en la tartera.
- Limpiamos la calabaza retirándole la piel y semillas. La partimos en cuadraditos.
- Pelamos la zanahoria, lavamos y cortamos en dados.
- Pelamos las patatas, lavamos y troceamos. Limpiamos el puerro, lavamos y cortamos.
- Rehogamos las verduras en el aceite colado del marisco unos minutos y reservamos.
- En otra tartera cocemos 10 minutos el caldo de pescado con las cáscaras y cabezas de los langostinos. Colamos e incorporamos el caldo a la tartera de verduras. Añadimos sal, el coñac y cocemos unos 15 minutos hasta que las verduras estén tiernas.
- A la cocción anterior le añadimos la mitad de los langostinos y cocemos 5 minutos más. Trituramos todo con la batidora hasta que nos quede una crema homogénea y rectificamos la sal, si fuese necesario.
- Freímos los langostinos restantes en un poco de aceite.
- Servimos la crema y decoramos con los langostinos fritos y un poco de pimienta.
