- Lo primero preparamos el salmón. Cortamos el dados (más pequeños o más grandes al gusto, yo los hago de unos 0, 5x0, 5 cm más o menos).
- En cuanto a los ingredientes para macerar, lo imprescindible en mi opinión es el limón y la salsa de soja, todo lo demás dependiendo de lo que hay en casa en ese momento se puede adaptar.
- Una vez cortado el salmón, añadimos la salsa de soja y el zumo de limón exprimido, y rallamos la corteza del limón (solo la parte exterior, si seguimos llegamos a la parte blanca que da un sabor amargo). Si tenemos vinagre de manzana, añadir 1 cucharada.
- Rallamos el jengibre, y cortamos la cebolla. Si son cebolletas (mis preferidas), lavamos y cortamos los tallos en rodajas finas y añadimos al salmón. Si es cebolla normal cortamos más pequeña o más grande al gusto, yo prefiero que sea más pequeña que los trozos de salmón.
- Si tenemos cilantro fresco, añadir 5 o 6 hojas cortadas pequeñas. El cilantro tiene un sabor muy peculiar, esto se puede omitir. Añadir el Tabasco si os gusta el picante, las gotitas al gusto, con 4 o 5 queda suave.
- Renovemos bien toda la mezcla y dejamos macerar. Yo lo suelo meter a la nevera, pero se puede dejar fuera sin problema. Con dejar macerar 15-30 minutos está bien
- Colocamos en un bowl los canónigos, y curtamos y añadimos el tomate.
- Pelamos y cortamos el aguacate, le echamos unas gotitas de limón, y añadimos también al bowl
- Añadimos también el maíz escurrido y por último, el salmón.
- Echamos por encima unas semillas de calabaza y de sésamo, o las que tengáis a mano, de chía también le quedan bien, y las pipas de girasol también.
